From carnitas to haute cuisine,
Dunham cooks up success

When it comes to cooking, Marc Dunham is an expert. From his Oklahoma City taco trailer to some of the most elite kitchens in the nation, Dunham keeps his menus and his life full of zest.

The Texas State University graduate trained at the Culinary Institute of America in Hyde Park, N.Y., the premier culinary school in the United States. Now Dunham is the newly appointed director of culinary arts at the Francis Tuttle Technology Center in Oklahoma City. Tasked with helping build the school’s culinary arts program, he shares his love of food and his industry knowledge with up-and-coming chefs.

Dunham and his wife Jenny, an acclaimed chef in her own right who worked with Julia Child early in her career, also own JT’s Tacos in Oklahoma City. The food trailer dishes up Tex-Mex flavors Monday through Friday at Fourth and Harrison Streets in downtown Oklahoma City.
